One of the most treasured items in the Tosetti family is a 100+ year 5-gallon vinegar barrel. Since before the 1906 San Francisco Earthquake, the family has poured remnants of the meal's wine into the barrel where it turns into the most delicious vinegar. It is so delicious that to us, all other vinegar tastes bland.

Shortly after Paul and I got married, his father gave us the barrel to care for. The entire Tosetti family owns the barrel. We are just the caretakers.

As you can imagine, time has taken its toll on the original barrel. Our fear was that it would break and we would lose the "mother". We tracked down a wine supply shop in Berkeley. We purchased a brand new barrel for $150. It took a few days for Paul to treat it before he transferred the mother from the old barrel. It is now in working order.

If the new barrel lasts as long as the old one, it will cost us just $1.50 per year for the world's greatest vinegar!
